Wine Experience Day in Alsace


We spent a great day in the vineyard last Saturday at Domaine Stentz-Buecher in Alsace. We were there for a Discovery Experience Day to learn about the work carried out in the vineyard, so after the introductions we headed straight out into the middle of the vines.

We stopped at the Rosenberg vineyard to meet our adopted vines. The grapes from our vines will be used to make the wine chosen for us by Gourmet Odyssey, and we immortalised the moment with a few photos!

It was then time to get down to some more serious business! Jean-Jacques Stentz explained to us the work that has already been conducted in the vineyard during the winter months, such as how the earth was heaped around the vines to protect them from the frosts, the long task to prune the vines to control the future yield, and how the soil is tilled to keep the grass and weeds in check.

The vines grow very quickly at this time of year, and you have to be vigilant in ensuring that the plant focuses its efforts in the production of grapes. De-budding is essential to remove the unwanted branches which sprout from the vines. If left, they will drain energy from the vines and decrease the quality of the future harvest.

Jean-Jacques showed us how to de-bud, and then we spread out between the rows to have a go at de-budding ourselves.

We then visited another vineyard to see a plot of vines that had recently been replanted. Jean-Jacques explained how this is done, and the patience that is then needed before grapes of a good enough quality for making wine can be harvested.

Back at the winery, we had earned our aperitif. The first wine to taste was the Who am I 2012, the only blended wine produced at the winery. We then tasted the Riesling Ortel 2012, Gewurztraminer Steingrübler Grand Cru 2008 and the Pinot Noir 2011. We continued the tasting over lunch of some local smoked ham and traditional roïgebrageldi, cheese, and blueberry tart.

After lunch, we returned to the vineyard to learn more about the work that will be done between now and the harvest, and how the winemaker chooses when to pick the grapes. Stéphane Stentz, also told us his reasons for working organically.

At the end of the day, we went down into the cellar for a brief introduction to the vinification side of things, following the journey that the grapes will take from the press to the vats, and to see where the wine will ferment next autumn.

A great Experience Day in the vineyard at Château Beau-Rivage


The sun and a warm welcome helped ensure that we spent two very enjoyable Discovery Experience Days at Château Beau Rivage in Bordeaux. After breakfast, we gathered together to learn the programme for the day, which was to be spent mainly in the vineyard to learn about the work on the vines to produce the best possible grapes come harvest time.

The team at Château Beau Rivage introduced us to the winery, the Bordeaux Supérieur and Haut-Médoc appellations, as well as the different clay and gravel terroir that the different vineyards enjoy.

In the 8ha plot of vines behind the château, we learnt how to identify the different grape varietals by the form of their leaves, and saw the difference in the two pruning techniques used in the vineyard, Guyot Double and Cordon.

Before getting stuck in with some work, we stopped for a few minutes in the plot of vines where our adopted vines are to be found, the time to take a few pictures of our vines.

It was the time to roll our sleeves up and get stuck in with two missions. Firstly to lower the training wires, and then to remove any unwanted shoots from the trunk of the vines. Under the watchful eye of Christine on Sunday, the owner of Château Beau Rivage, and of Sandrine on Saturday, the chai manager, we learnt about the importance of this work to help improve the quality of the future harvest, and hence the wine that will result from it. So, armed with a pair of secateurs and lots of good cheer, we each took a row in pairs, and lowered the training wires so that the weight of the foliage and grapes will then be better supported, and we removed the shoots that will not produce fruit, but will sap the energy and nutrients from the plant.

After the effort comes the reward! Back at the winery we tasted the Clairet rosé wine before moving onto the reds. We tasted the Benjamin, Château Beau Rivage, Clos la Bohème and Clementine/Le Phare wines over lunch. Honey tomatoes, melon and ham with the aperitif, followed by a salmon duo, tomato and mozzarella salad. For the main course we had some succulent chicken cooked at low temperature with a cep sauce, and potato and shallot fondant. We finished the meal with some basque cheese and strawberry and orange tartlets.

Fully revitalised, we then headed back out into the vineyard.

In the afternoon, we picked up where we had left off, and learnt about the work that remains to be done in the vineyard from now until the harvest. We talked about working organically, and what that means for the winemaker in the work in the vineyard and chai.

In the fermentation hall, we had a quick introduction into the vinification and wine-making side of the profession. How the grapes are received during the harvest, how the wine ferments, is racked and the aged in oak barrels up until they are ready for bottling.

A couple of days full of information. As well as leaving with a few bottles of wine, we hope that each of the participants learnt a little bit more about the work that goes on behind the scenes in making wine.

De-budding the vines at Domaine la Cabotte


We were spoilt by the fantastic weather for the latest of the Discovery Experience Days at Domaine la Cabotte. After a coffee and warm welcome by the winemakers, Eric & Marie-Pierre, we gathered outside for an introduction to the day that we were to spend together in the vineyard.

Eric & Marie-Pierre presented the winery and enlightened us on the local red and white grape varietals, the Massif d'Uchaux appellation and their approach to winemaking, before leading us out into the vineyard. Eric showed us the different grape varietals and how to tell them apart. In the background, the birds were singing, and then suddenly, a hare jumped up onto the dry stone wall!

Eric & Marie-Pierre led us to a plot of vines that they had earmarked us to work on. They explained the importance of de-budding to reduce the number of buds per vine, and hence the number of grapes produced. This will help the grapes to have a better balance of sugar, acidity, tannins and aroma come harvest time. They showed us how to de-bud, and then in pairs, we each took on a row!

Once we had finished, Eric told us about the other work that has been keeping them busy in the vineyard since the last harvest, notably the pruning. After the de-budding will come the raising of the training wires as the vines grow taller and taller.

On our way back to winery, Eric showed us the enclosure where he prepares the biodynamic treatments used in the vineyard, and he introduced us to this fascinating topic. We started the wine tasting with a nice refreshing white and rosé wine, before sitting down to enjoy the lunch, that Marie-Pierre had put together specially for us.

A deliciously seasoned tomato and rocket salad to start, accompanied by the Colline Cotes du Rhone 2014 red wine. For the main course, we savoured a traditional Caillette, served with potatoes and a tomato sauce, served with the Garance red wine. We then enjoyed the winery's Chateauneuf du Pape wine with cheese, before finishing with a red fruit clafoutis for dessert.

We then put our boots back on and headed off to the vineyard again, this time to meet our adopted vines! Once we had taken a few photos to immortalise the occasion, Eric explained a little bit more about the terroir and characteristics of the Massif d'Uchaux region and showed us the different types of soil, some more stony than others.

At the end of the day, we visited the chai where Eric gave us an overview of how the wines ferment and are worked during the vinification period. Many thanks to Eric & Marie-Pierre for this great day!

De-budding in Burgundy at Domaine Chapelle


After the worry of a little rain on Friday evening, all our doubts disappeared on Saturday morning as the wind swept the last of the clouds away from the Burgundy sky.  We were at Domaine Chapelle in Santenay for a Discovery Experience Day to learn all about the work carried out in the vineyard by the winemaker to obtain the best possible grapes come harvest time.

Following a brief presentation of the winery by Jean-François, the owner and winemaker, we headed out into the garden of the family manor, where Jean-François talked about the geography and geology of Burgundy.  He also explained why he had decided to embark on the organic approach to making wine.  For him, it is as much about taking pleasure from drinking a wine that is free from harmful products as it is about respecting the soil and protecting the health of the people who work at the winery.

Jean-François then showed us the "Clos des Cornières" vineyard, where our adopted vines are to be found.  He took the opportunity to explain the differences between the Burgundy regional, village, Premier Cru and Grand Cru appellations.  We then met our adopted vines for the first time.  A very emotional moment!

We knew that sooner or later, it would be time for us to roll up our sleeves and do some work...  We're getting into the de-budding season.  After pruning, a very important stage in determining the future development of the vines and for reducing the quantity of grapes that each vine produces, de-budding is another key step.  You mustn't leave too many branches and leaves to feed, or you run the risk of not obtaining mature enough grapes.  We removed some of the buds on the vines to better appreciate the complexity and scale of this titanic job.

Back at the winery, we made the most of the lovely April sun, and enjoyed our aperitif outside.  We started the wine tasting with a Santenay 2013 white wine, accompanied by some gougères, and then continued the tasting over lunch of a Burgundy Pinot Noir 2011, a Santenay Clos de Cornières 2011 and a Chassagne Montrachet Premier Cru 2010 with cheese.

In the afternoon, we took a stroll to the Beaurepaire plot of Santenay Premier Cru vines.  The walk allowed us to appreciate the landscape of the southern côte de Beaune, and to learn a little more about the local geology.  The vineyard has just been replanted, and so we found out about a vine's life-cycle of a vine.  Yannick Jacrot, the winery's Technical Director, explained how the vines are planted and the vineyard prepared.

The day finished with a brief visit of the fermentation hall and cellar where the barrels of wine are ageing and the bottles of wine are stocked.

Bud burst of the vines in Spring


After the long and in parts cold winter, it's time to crawl out from under the duvet and make the most of the sunny days that spring will hopefully bring us. The vines feel the same way!

The vines have been in hibernation mode between December and March. During this time the sap has descended down into the root system of the plants, enabling the winemakers to prune the vines. Pruning limits the growth of the plant and limits the quantity of grapes produced, whilst improving their quality.

Towards the end of the pruning season, from around mid-March, you can notice the vines starting to "cry". But not to worry, it's a normal occurrence!

The vine's tears appear when the sap climbs up again from the roots and starts to flow from the exposed wood on the branches that have been cut during pruning. This is the first sign of life starting again for the new season.

The brighter days and longer hours of sunshine, couple with warmer temperatures cause the vine buds to swell. The tiny buds have been protected during the colder winter months by a layer of husk. The husk splits open as the temperatures rise and head north of 10°C, to give the buds room to develop. The buds generally start to grow around the end of March and beginning of April.

A small green point and new branches begin to appear from each bud, and you have to be careful of spring frosts during this precarious stage in the vine's developments.

Pruning the vines in Chinon


Last weekend, we welcomed the first clients of the 2015 vintage to Château de la Bonnelière in Chinon for a Discovery Experience Day. This sunny and fresh day enabled us to learn about the winery and the Clos de la Bonnelière vineyard. We met our adopted vines and learnt how to prune the vines, an essential step in the development of the vines.

Our host, Marc Plouzeau, introduced us to the winery and explained his long family connection to the estate. The winery's vineyards stretch across the left bank of the Vienne river, and include different terroir of gravel, clay and flint soils.

Having presented how the work is approached in the different vineyards, Marc gave us a sneak preview of his new range of labels which graphically represent this philosophy.

We then headed out into the Clos de la Bonnelière vineyard to meet our adopted vines for the first time!

After a few photos for the "My Vine" photo competition, it was time to get down to some more serious work!

To warm us up, we started by pulling away some of the pruned branches. The vineyard had been pruned by Marc's team, but he had left us the task of stripping away the old wood to leave a clean space around the branches left to produce this year's harvest.

Marc also taught us how to prune using the "Guyot Simple" technique which is anything but simple!

Each vine is unique, so each needs a moment of reflection before the secateurs start snipping. We started by removing the branch that had produced last year's grapes. Then we needed to choose the new branch for this year, which is usually on the other side of the vine from last year's. We then cleaned up the branch to leave just 8 eyes, so as to reduce the number of grapes, and increase their sugar levels. To finish we left a shorter branch or  "spur", which will then become next years fruit bearing branch.

To end the morning's activities, Marc explained the next stages of working the vines until they are ready to be harvested, from de-budding, trimming and green harvesting. Each of these steps will help to control the future yield and produce better quality grapes.

We were then rewarded with a tasting of the wines from the château and a meal in the barn. We tasted a Touraine Sauvignon 2014 white wine with the fish terrine, a Chinon Rive Gauche 2014 and a Clos de la Bonnelière 2012 with the blanquette de veau. To finish in style we enjoyed a Chapelle 2012 with some local goat?s cheese, and the little treasure of the winery, the "Ante Phylloxéra" wine, which is made from a micro plot of vines that haven?t been grafted, and can be traced back for more than 200 years!

Despite some requests for a siesta after lunch, we continued the day by visiting the tool shed and learning about the machines and equipment which help Marc and his team work the vines organically.

A lovely day in the Burgundy vineyard


It was a beautiful sunny day last Sunday in Burgundy, and we had the good fortune to be at Domaine Chapelle in Santenay for a Discovery Experience Day. This hands-on wine day introduces us to the winery, and teaches us about all of the work carried out by the winemaker in the vineyard to produce the best possible grapes come harvest time.

After an introduction to the winery and the region by Jean-François Chapelle, the owner of the estate, we walked to the Clos des Cornières vineyard where our adopted vines are located.

Jean-François showed us the vineyard and pointed out the different geological strata that can be found around the winery and in the Côte de Beaune. This helps us to better understand the appellation system in the region of Burgundy generic, Village, Premier Cru and Grand Cru wines. We then took a few minutes to meet our adopted vines for the first time, a very emotional moment for the new parents!

It was then time to get down to some work. We're nearing the end of the pruning season, which is one of the most important phases in the development of the vines. You have to prune well to reduce the quantity of grapes produced by each vine, and so improve the concentration of sugar in each grape bunch. We learnt how to prune using the Cordon de Royat method and had a go on some vines which had been pre-pruned by a tractor to cut down some of the wood.

The vineyard on the other side of the road is planted with Chardonnay, and the Guyot Simple method is used to prune. Here there is no pre-pruning done, so once we had cut the branches, you need to pull them from the training wires as the tendrils have wound around them.

Back at the winery, we made the most of the sunshine and started the wine tasting in the courtyard with a Santenay 2013 white wine, accompanied by some gougères. The tasting continued during lunch with a Burgundy Pinot Noir 2011, a Santenay "Clos des Cornières" 2011 and a Chassagne Montrachet Premier Cru Morgeot 2010.

After lunch, we went for a walk to one of the Santenay Premier Cru vineyards, the Beaurepaire. This gave us the chance to discover some of the different views of the Côte de Beaune and to learn more about the local geology.

The day ended with a quick tour of the vaulted cellar to see where the wines are ageing in barrels and where the bottles are stocked until ready for labelling. Many thanks to Jean-François for his passionate explanations, and to all of our dear clients.

Last of the de-budding in the Burgundy vineyard


You need good grapes to make good wine.  That's what the participants of the Wine Discovery Experience Day learnt last weekend at Domaine Chapelle.  Jean-François, the winemaker and owner of the winery, and his Technical Director, Yannick, welcomed us for the day to share their passion for their profession.

During the Discovery Experience Days, we learn all about the key stages in working in the vineyard to get the best possible grapes come harvest time.  And the best way to learn is by having a go yourself!  So, after an introduction to the winery, its wines, and the Burgundy terroir, Jean-François led us out into the vineyard.

We took a few minutes to find our adopted vines before Yannick explained all of the work that has been carried out in the vineyard since pruning.  We are now finishing the de-budding phase in the pinot noir vineyard plots, which involves removing any superfluous buds or shoots.  And we have just started to train the chardonnay vines; which involves ensuring that the shoots grow between the training wires and then clipping the wires together to help the vines support the weight of the foliage and fruit.

Having learnt the theory from Jean-François and Yannick, we got stuck in and had a go ourselves.  A little hesitant at first in front of the vines as we didn't want to cause them any damage, but we soon got the hang of it.
A few hours later we were back at the winery, ready to taste some wine!  We tasted a Santenay white wine, before tasting a Burgundy red, a Santenay Clos des Cornières and a Santenay Premier Cru Les Gravières.

To finish the day, Yannick and Jean-François took us down into the fermentation hall and cellar, where they introduced us to the technical side of making and ageing wine, something that we will develop further during the Vinification Experience Days.
To sum up the day in the words of Jean-François: the work in the vineyard before the harvest is essential, because even a good winemaker finds it difficult to make a good wine with poor quality grapes.

A good winemaker is therefore a good farmer, and after their hard work and enthusiasm in the vineyard, our apprentice winemakers would wholeheartedly agree!  Many thanks to our participants for a very enjoyable weekend!

In the vineyard. De-budding and training the vines


With the arrival of Spring, the vines are emerging from their winter rest. In March we could see the tears of sap appearing on the tips of the pruned branches, and the first buds burst into life a few weeks later. These are all signs that the vines are starting their growth for the new season. And for the winemaker, it's the signal that a whole series of jobs will soon need to be done in the vineyard to ensure the best quality grapes come harvest time.

The first of the tasks is the de-budding to remove all the excess buds and any unwanted shoots. De-budding generally takes place a few weeks after the bud burst. During pruning, a certain number of eyes are left on the branch, which represents the number of buds and branches that will form (see our post of pruning). However, sometimes more buds appear than were bargained for during pruning, which can increase the load on the vines and reduce the quality of the harvest. Studies have shown that de-budding improves the maturity of raisins at harvest time by increasing the sugar levels, and thus the potential alcoholic volume. De-budding is a purely manual task. There is no machine capable of removing the buds without harming the plant.

We also remove the buds and shoots from the base and trunk of the vines. This is known as "epamprage" and can be done manually or mechanically using a tractor with rotating axels that brush the vines and remove the unwanted growth. Epamprage can also be conducted chemically with contact products or by using heat to burn the new shoots. Empamprage is often conducted at the same time as the soil is turned to remove grass and weeds.

The remaining shoots on the vines will then continue to grow, and from May to July comes the moment to raise the training wires in the vineyards. As the vines grow, the wires are raised and fixed to the posts, a task that usually requires several passes. We make sure that all of the branches grow between the two training wires so that the weight of the leaves and fruit are better supported. To help avoid the branches falling back down, the wires are clipped together. The branches are spaced apart to let the air better circulate and the sun to reach the leaves. This also helps the tractors to pass freely in the vineyard without damaging the vines and to improve the efficiency of any treatments.

At the same time as working on the vines, the winemaker also works the soil from April onwards to air the soil, let in more warmth, and to keep the growth of grass and weeds in check.

The next tasks for the winemaker in the vineyard will be to control the growth between the leaves, branches and fruit, jobs that we will explain in more detail soon.

End of the winter work in the vineyard in Chinon


The Discovery Experience Days for the 2014 vintage got under way last Saturday at Château de la Bonnelière in Chinon.  The aim of the day was to learn more about the work needed in the vineyard to produce the best possible grapes come harvest time.

With the relatively mild winter, pruning has now finished across all of the winery's vineyards.  It's important to wrap up the pruning before the sap rises into the branches.  Marc explained how the vines are pruned to leave just one branch that will produce the fruit-bearing canes on one side, and a short branch on the other in preparation for the following year.

Once pruned, the cut branches need to be removed from the vines.  Marc had left us a few rows to do, so rolled up our sleeves and got stuck in!  The vines wrap themselves tightly around the training wires, so it's quite a physical job!

We placed the branches in the middle of the rows where they will be crushed in-situ to return some nutrients to the soil when they decompose.

The next job is to bend the remaining branch on each vine until it is horizontal and then attach it to the training wire.  We worried about breaking the branches, but with a gentle touch we managed just fine!

During the morning, Marc also explained the other work that will be carried out into the vineyard between now and harvest time, and we learnt that there is much more to be done than you would first think!

After our hard work, the aperitif was just reward!  We tasted one of the winery's sparkling wines, "Perles Fines", with some homemade goat's cheese and olive cake.  During the meal, we continued the wine tasting with some of the other white and red wines from the winery.

In the afternoon, Marc introduced us to the notion of biodynamic farming and showed us how he makes some of his biodynamic preparations.  He also showed us the range of tools and machines that he uses to work the vines and the soil.

The day ended in the winery's cellar which is located directly underneath the Chinon Fortress.  Marc showed us where the wines are aged in oak barrels and also took the opportunity to turn his bottles of sparkling wine.

Pruning the Steingrubler Grand Cru Riesling vines in Alsace


Last Saturday we welcomed the adoptive parents of the new 2014 vintage to Domaine Stentz-Buecher in Wettolsheim for a Discovery Experience Day. The aim of the day was to learn about the work in the vineyard, starting during the winter and ending up at harvest time, when the grapes will have reached maturity.

After the introduction of Céline, winemaker at the estate with her brother Stéphane, we headed off to the vineyard to meet our adopted vines. Having taken a few pictures, we then walked through the different vineyards until we arrived at the Steingrubler Grand Cru plot. Here, Céline and Stéphane had left us a few rows to prune!

Armed with a pair of secateurs, and under the instructions of Jean-Jacques, the father of Céline and Stéphane, we learnt how to prune the vines using the Guyot method.

It's not as easy as it would seem at first to work out which are the canes to leave or cut, but getting stuck and having a go is the best way to learn! Pruning is really important to help control the yield of fruit per vine.

At the end of the morning spent in the vineyard, we returned to the winery to taste some of the wines and to enjoy an Alsacien stew with the Stentz family.

In the afternoon we visited the fermentation halls and the cellar for an introduction to the winemaking side of the things from the harvest, through the fermentation and the ageing of the wine. These topics will be covered in more detail during the Harvest and Vinification Experience Days.

Our first Harvest Experience Day at Domaine Stentz-Buecher


Last Saturday, we harvested for the first time at Domaine Stentz-Buecher in Alsace, the last of the 7 organic wineries to have partnered with Gourmet Odyssey.

Once the adoptive vine owners had arrived, Céline who manages the winery with her brother Stéphane, told us about history of this family estate. We then headed out to the vineyard where the adopted vines are located. For those who were returning after one of the Discovery Experience Days, they could see how their vines had been pampered, and for the others, it was the chance to meet them and take a few photos!

We then moved on to a vineyard lower down the village to harvest a plot of Riesling grapes. On the way we picked some Chasselas grapes to take home and eat. The goal for the day was to fill two containers, so each armed with a pair of secateurs and a bucket, we started to harvest the grapes.

After the morning spent in the vineyard, we returned to the winery, where Stéphane explained how the grapes are put into the vats and how the juice ferments to produce wine. We tasted some grape juice which had been put into the vat 3 days beforehand, before tasting some of the wines, Rielsing Tradition 2010, Pinot Gris Rosenberg 2010, Gewurztraminer Hengst 2008 and Pinot Noir 2011.

We finished the day with a harvesters buffet of local charcuterie, accompanied by the domaine's wines, ending with a Crémant d'Alsace sparkling wine with the dessert.

Harvest Experience Days at Domaine Chapelle


We spent three excellent days last weekend at Domaine Chapelle for the Harvest Experience days.

All week, the Gourmet Odyssey team anxiously monitored the weather forecast as Jean-Franois, the winemaker at Domaine Chapelle, was predicting rain for the weekend. In the end, the wet conditions didn't dampen the spirits, and we had a great group who were fully motivated to participate in the harvest. Those lucky enough to have chosen the Monday even saw some sunshine!

Each morning we welcomed the adoptive owners of vines in the "Clos des Cornires" vineyard. After a coffee and a short introduction to the winery, we set off to the vineyard. With a few explanations from Jean-Franois and plenty of good humour, we set about harvesting the grapes.

We then followed the grapes to the reception hall to sort the grapes and track their journey into the vats.

Whilst some got stuck in around the sorting table, secateurs in hand, under the instruction of Yannick, the Technical Director, others watched the grapes climb the conveyor belt and fall into the vat. Jean-Franois talked us through the first stages of fermentation and how the grape juice will gradually transform into wine.

After a busy morning, it was time to taste some of the estate's wines, accompanied by one of the local specialties, gougres, before sitting down to lunch in the harvesters' refectory. The conversation, food and wine flowed, and it was difficult to get going again afterwards!

The days finished with a visit of the cellar, an impressive labyrinth of barrels and bottles.

First Harvest Experience Day at Domaine la Cabotte


Last Saturday was the first time that we ran a Harvest Experience Day at Domaine la Cabotte, and here is a small resum of how it went:

09:30 For this first Harvest Experience Day at Domaine la Cabotte, the day was forecast to be cloudy, but thankfully there shouldn't be any rain before tomorrow. Ideal conditions for harvesting without getting too hot. Everybody looked motivated, we'd find out once we're in the vineyard !

Marie-Pierre, the owner of the winery along with her husband Eric, introduced us to the region and the history of Domaine la Cabotte, and explained why the harvest this year is 2-3 weeks later than in a normal year.

10:00 We started the day in the plot where the adopted vines are located to see and take a few pictures of our vines. Eric explained that the grapes are not as abundant as usual, and that they are not quite mature enough to be picked, so we headed off to another plot of white Grenache grapes lower down in the vineyard.

10:30 The buckets and secateurs were awaiting us, and after Eric explained how to harvest the bunches, we spread out amongst the rows in pairs to get down to work! In the middle of the first row, the sun came out and it started to heat up. Would we get to the end?! Marie-Pierre kept our spirits up by making us think of the wine tasting and meal to come! After the first row and a quick refreshment stop, we set off to harvest a second row each - uphill this time! We must have started to get the hang of it, because we were getting much quicker, or was it in anticipation of the wine tasting?!

13:00 Mission accomplished in filling the two trailers with grapes. We followed them back to the chai where we emptied our harvest into the press and set it going for 2 hours of pressing. Eric reckoned that it would give about 1000 litres of juice. Whilst waiting for the press to do its thing, we quenched our thirst by tasting some of the estate's wines. We started with the Colline Ctes du Rhne white wine, made from the same plot that we had just harvested, but last year in 2012. We then tasted the Colline red and the Gabriel 2011.

13:30 Under the shade of the trees, we continued the tasting with the Garance 2011, accompanied by the delicious home-made meal prepared by Marie-Pierre. We ended the meal with cheese and desert accompanied by the Sauvageonne 2012 white wine.
15h00 After the coffee and the meal, it was difficult to get going again, but the hard work was now behind us. As the press finished the last part of its cycle, Eric explained the differences between working with the harvest for white and red wines, and talked us through the first stages of fermentation. We then finished the day by tasting the juice from the grapes that we had harvested and that from another lot which had been picked a few days earlier. Having finished being pressed, the juice from our harvest was then put into a refrigerated vat. The discarded stems, skin and pips will then be taken to the distillery. Finally we had harvested enough to produce some 1500 litres of juice!
