Nurturing the pinot noir vines to prepare them for the harvest


The quality of wine is determined largely by the quality of grapes that are picked at harvest time. And to ensure the best possible grapes, the winemaker is kept busy in the vineyard, especially at this time of year, when the vines are growing rapidly. We spent a fascinating Discovery Experience Day at the stunning Domaine Chapelle in Burgundy to find out more.

In the winery garden, surrounded by vines, Jean-François, the owner of Domaine Chapelle, briefly introduced us to his winery.  The temperature was already beginning to rise with the very hot end of June that all of France has been enduring, so we quickly headed out to the vineyard just below the chateau, and home to our adopted vines.  We spent a few minutes to locate our micro-plot of vines, and encourage them as the grapes start to grow.

Jean-François and Yannick, the Technical Director, then explained the work that has already been carried out in the vineyard during winter and spring to prune and de-bud the vines.  These are both critical tasks to control the quantity and quality of grapes that will be produced. Decreasing the number of grapes and branches, helps the vines to concentrate their energy on the fruit bearing branches.

The short flowering season has recently finished, and we could see the first grapes starting to form.   This is known as fruit set.  For the next few weeks the grapes will gradually get bigger.  This combined with the growth of shoots and leaves, causes the branches to fall into the middle of the rows which isn’t good for a number of reasons.

Firstly, it makes it very difficult to walk down the rows, let alone drive the tractor.  To do so would damage the branches, and so makes it impossible to treat the vines.  This is particularly important in organic wine-making, as the treatments used to protect the vines from mildew and odium get washed away when it rains, so they need to be re-administered.  Secondly the branches that touch the ground would act as highways for fungi spores to spread from the soil to the vines, again putting the vines and grapes at risk.  Thirdly the weight of the foliage and fruit might cause the branches to break.  For all these reasons, and to ensure more sunlight gets to the vines and that there is a better airflow around the grapes, the vines need to be trained using a trellis system.

Having watched Yannick and Jean-François show us how to train the vines, we spread out among the rows and had a go ourselves.  First we raised the training wires on either side of the row, and then clipped them together using a small bio-degradable clip.  We then ensured that all of the branches were growing between the wires, and were supported as best as possible.  Rewarding work, because when you looked back down the rows where we had been, everything was much more orderly than before!

We then headed back to the shade of the garden where we learnt more about the jobs that need to be done in the vineyard between now and the harvest.  The conversation then turned to other topics as diverse as the history of the winery and the introduction of the Appellation d’Origine Contrôlée system in Burgundy, something that Jean-François’ ancestors were involved in lobbying for.

All of the work and talk had made us thirsty, so to quench it, Jean-François served us a nice chilled 2017 Santenay Saint Jean organic white wine, accompanied by some gougères, a delicious local cheese shoe pastry delicacy.

Lunch was enjoyed in the relative cool of the harvester’s refectory.  We tasted three of the wineries red wines, starting with the 2017 Burgundy, then the 2015 Santenay Clos des Cornières, and ending with the 2013 Santenay La Comme Premier Cru.

After lunch, Yannick took us on a tour of the fermentation hall and cellar.  Here we were introduced to the wine-making side of the profession, and we marvelled at the site of all the barrels and bottles resting in the vaulted underground cellar.  We’ll be spending more time in the fermentation hall during the Harvest Experience Days in September as we put the grapes into the vats, and we’ll get to taste some of the wines that are in the ageing process during the Vinification Experience Days early next year.

Summer work in the vineyard in the Loire Valley


The beginning of summer is a hectic time in the vineyard. Everything grows quickly and the winemaker has lots of work to do to keep everything under control and safeguard the quality of the future harvest as we were to find out during the Gourmet Odyssey Discovery Experience Day at Château de la Bonnelière in the Loire Valley.

We started the day in Clos de la Bonnelière vineyard, next to the château.  This is where our adopted vines are located, and we took a few minutes to find our vines, encourage them to produce a good harvest, and immortalise the moment with a few photos!

The winemaker, Marc Plouzeau, then explained all of the work that has been carried out in the vineyard so far this year, and in particular the vital task of pruning, so important in controlling the yield and improving the potential quality of the grapes.
The wet end to spring, followed by the warmth and sun of the past couple of weeks has meant that the vegetation has thrived and everything is growing really quickly.  There is way more than enough to keep the winemaker busy, and so Marc was very welcome of our help for the day!  He had set aside three different jobs for us to do.

At this time of the year, the vines can grow more than 10 centimetres in a week.  To protect the branches and future grapes, they need to be trained behind the training wires.  This helps the vine support the weight of the branches, leaves, and future grapes, and keeps them out of the way of the tractor when it drives up and down the rows.  First we had to raise the training wire on each side of the row, being careful not damage the floral caps of the vine flowers, and then we clipped the wires together.  Finally we ensured that all of the branches were contained between the wires and as evenly spaced as possible to help improve the air flow around the leaves, something that is important to help the foliage dry more quickly following any rain, thus reducing the risk of disease.

Despite the best efforts to prune the vines, there are always unwanted shoots that grow, either as double buds or from low down on the vine trunk.  These shoots drain energy from the vines to the detriment of the quality of the grapes.  By hand or with the help of a small spade, we removed any shoots that grew from the trunk.  Marc also explained the way that vines are grafted onto root stocks that are resistant to phyloxera, and showed us the difference in the shoots that grow from the grafted vine or directly from the root, shoots that are known as Americans in reference to the origin of the roots.

It’s not just the vines that are growing quickly.  The grass and wild flowers are also thriving.  The tractor had recently been put to work in the vineyard, lightly ploughing every other row to remove the grass and flowers.  The unploughed rows had been mowed to keep the grass short and stop fungi from spreading to the vines.  When ploughing, the tractor carries a special mechanical plough that does a fairly good job of ploughing around the vine stocks.  It however struggles if the gap between two vines or between a vine and a training post is too small.  In such instances, the only way to remove the grass and flowers is by hand with the help of a hoe.  This was the third task Marc had reserved for us, and so hoe in hand, we got stuck in!

After our busy morning, we had earned our aperitif!  Marc served us a nice fresh glass of “Perle Sauvage”, his naturally sparkling wine made from Chenin Blanc grapes, accompanied by local rillettes, and homemade goats’ cheese cake and gougères.  We continued the tasting of wine over lunch, the crisp 2018 Touraine Sauvignon “Bonnelière” pairing well with the fish terrine starter.  We then tasted the reds with the Tagine main course, cheese and desert, starting with the fruity 2018 Chinon “La Roche”, then the more complex 2017 Chinon “Clos de la Bonnelière”, the wine chosen for the Gourmet Odyssey Wine Experience, and finishing with the full-bodied 2016 Chinon “Chapelle”.

In the afternoon, we went for a short walk through the vineyards to a plot that Marc had recently planted.  He explained how the vines are planted and the implications on production quantities involved.  Before planting a new plot, another crop is planted to replenish the soil with lost nutrients. The new vines won’t produce any grapes for making wine in the first three years, followed by several years of low quality grapes.  Replanting is something that it takes time to reap the rewards from!

Marc also took time to explain how the vines are cared for organically and the implications that it entails.

We ended the day in the cool of the vinification hall.  Here Marc gave us an introduction to what happens when the grapes are received at harvest time, and how the juice is turned into wine.  We’ll be spending much more time here during the Harvest and Vinification Experience Days.

Pruning the pinot noir vines in Burgundy


March always marks the change of season, and it is the last month that we can prune the vines in Burgundy before spring arrives and the vines start to grow again.  It’s also a month that has very changeable weather, and fortunately for the adoptive vine parents, the temperatures were very mild for the first Discovery Experience Day of the 2018 vintage at Domaine Chapelle in Santenay, enabling us to get out into the vineyard and learn all about the work to nurture the vines.

After a brief introduction to this day focused on pruning and attaching the vines, Simon Chapelle, the son of Jean-François and future winemaker at the winery, recounted the history of the family winery and how the different Burgundy wine appellations are defined.

We then headed to the Clos des Cornières vineyard, accompanied by Simon and Yannick, the technical director at Domaine Chapelle. This is where our adopted pinot noir vines are located and we took a few minutes to take a few photos!

Split into two groups, Simon and Yannick then explained the work necessary in the vineyard during the winter and spring months to arrive at a quality harvest, and they told us how they work organically at the winery.

The Clos des Cornières vineyard produces the eponymous wine, and is planted solely with pinot noir vines, as in Burgundy, there is no blending of different grape varietals. The quality of the 2018 vintage therefore relies on the quality of grapes that will be harvested this autumn, and the quality is determined for a large part on the ever so important work of the moment, the pruning of the vines.

Simon and Yannick explained which branches to keep, which to cut and how many buds to leave on each vine. This will directly impact the yield of each vine. They also enlightened us as to the many questions that have to be answered when thinking about how to prune each vine. Armed with a pair of secateurs, it was then our turn to put the theory into practice! Despite some hesitation at first, we gradually started to get the hang of this difficult job!

After pruning the next task is to bend the branches that haven’t been cut away. We crossed the road to the neighbouring vineyard that is planted with chardonnay vines, and is more advanced in the pruning. This is also an important step because by folding the branch and attaching it to the bottom training wire, it helps ensure that the sap will flow more evenly among all of the future fruit-bearing canes, and that they will be better spaced to avoid disease from spreading.

We then headed back to the winery to enjoy an aperitif outside in the courtyard whilst soaking up more of the spring sunshine! Some gougères, a typical Burgundy shoe pastry specialty, and the winery’s Santenay Saint-Jean white wine delighted our taste buds!

We continued the local specialties over a tasty lunch of other local dishes of perch terrine, boeuf bourguignon, local cheeses and a chocolate and cassis entremet. Lunch was accompanied by a Burgundy 2016 red, a Santenay Clos des Cornières 2013, and a Santenay Premier Cru “Les Gravières” 2012.

After lunch we had a tour of the vinification hall and labyrinth of vaulted cellars underneath the winery to see where the wines ferment and age.  

We’ll now leave it to the winemakers to continue to care for the vines, and wait for the grapes to develop and grow for the harvest. We’re looking forward to coming back already!

Vinification and blending of wines in the Languedoc


The sun was awaiting the participants at Domaine Allegria for the Vinification Experience Day, the last of the wine experience days for the adoptive vine parents of the 2016 vintage.  The aim of the day was to discover what happens in the cellar after the grapes have been picked at harvest time up until the wine is ready for being bottled.

We started the day with a quick visit to the vineyard to see our adopted vines, where we took a few souvenir photos.  We also learnt about what has been happening in the vineyard at the moment, what work has been done since last year’s harvest, and how the vines have come back to life in the spring.

We learnt how the vines had been pruned, a long task that had finished three weeks earlier. The cut branches had then been pulled from the vines and left between the rows to be crushed.

When we returned from the vineyard, we visited the cellar from top to bottom.  The questions flowed.  What is a wine without sulphites, why do you use selected yeasts, and many more such topics.  We talked in detail about the different processes between making red and white wine.

We then tested our sense of smell with the help of 12 bottles containing different aromas.  This exercise would help us find some of the words to describe the wines that we were to taste later. 

Lunch was served in the sun on the terrace.  The winery’s rosé Dolce Vita 2016 wine was served in a jeroboam for the aperitif.  We tasted different wines, paired with local charcuterie and a lentil salad; the Cinsault Abuelo 2015, a Carignan Gourmand 2015, and the Cousu Main 2013 in a magnum.  With the goat’s cheese from the nearby Mas Roland, we tasted the Tribu d’A white 2015, which goes perfectly with cheese.  We finished the meal with the Grande Cuvée La Belle Histoire 2015, a great vintage for Languedoc wines.  With the delicious almond cake and profiteroles, we enjoyed a coffee.

After lunch, we returned to the cellar to taste three of the wines from the 2016 vintage that are still in the ageing process.  Each of the wines was of a different grape varietal, enabling us to learn the different characteristics of Cinsalut, Syrah and Mourvèdre.  The wines are still young, and full of carbon dioxide following the fermentation.  But they were also very soft considering the stage that they are at, and already enjoyable to drink.

Having tasted these different wines, the next exercise was to have a go at blending them together.  We learnt that blending the different grape varietals together gives a deeper and more complex final wine.
By the end of the day, we had learnt many new things about wine, and will have a few stories to recount when we open the next bottle!

Wine-making in the Côtes du Rhône region at Domaine la Cabotte


Today is a festival for our taste buds! We're going to taste and re-taste all of the wines at Domaine la Cabotte in the Côtes du Rhône Massif d'Uchaux region during a Gourmet Odyssey Vinification Experience Day.

The 2016 vintage wines are still slowly finishing the vinification process in the vats. The weather is a little unstable, and the arrival of the rain sees the participants put on our boots. The vines are delighted and all of the young buds get ready to soak up this lovely spring rain.

Marie-Pierre and Eric, the owners take us to meet our adopted Grenache vines that are used in making the Garance wine. The cameras come out and click away to immortalise the moment.

As the first drops of rain start to fall, we head for cover in the chai. Here, Marie-Pierre had prepared a long table with wine glasses, bottles and spittoons. We each take a seat as Eric explains how the grapes are transformed into wine.

The questions flow and we cover lots of topics. We learn about the fundamental role of yeast, which is naturally present on the grape skins, and turns the sugar into alcohol. Each vat of wine ferments at its own pace, one of the wonderful mysteries of wine-making. We taste different wines that are still ageing to appreciate for ourselves how they are each developing.

We then head to the caveau to put our noses to the test. We try and identify the floral and fruity aromas that can be found in wine: blackcurrant, lime tree, blackberry chocolate truffle, raspberry, lemon, honey etc...

There are two or three "noses" in the group who are very good at naming the different aromas, but for the majority of us, it's more difficult to put a name to them. That is until we're told what the smell is, and we hear a chorus of "of course it is!"

It is now lunch time, and we sit down to enjoy a pork confit, local goat's cheese and dessert. Each dish is accompanied by different wines, and we enjoy our glasses of Clairette, Colline, Gabriel, and Châteauneuf-du-Pape.

In the afternoon the sky clears, and Eric takes us on a walk around the vineyard to better understand the Massif d'Uchaux terroir and its influence on the wine's style. The ground is very rocky and the vines share the plateau with trees and scrubland, giving the wine both complexity and freshness.

The day draws to a close, and we look back on the variety of tastes and smells that we have enjoyed and discovered. We also load the car boots up with a few bottles of our favourite wines to take a little piece of Domaine la Cabotte home with us!

The finalists of the My Vine photo competition


Once again, this year we have spent many great moments at our partner wineries with all of the Gourmet Odyssey Experience Day participants. We've learnt lots more about wine thanks to our winemakers, we've had fun working in the vineyards, have loved tasting the wines from the cellar, and we've received many great photos throughout the year. Thank you!

We've selected 20 photos for the My Vine 2015 final, and it was a very difficult job to do! There will be two winners: The Facebook prize for the one that receives the most likes (get clicking), and the Gourmet Odyssey Jury prize for the most original photo.

Take a look at our selected finalists and vote for your favourite photo on Facebook between now and the 7th December at 9:00am! Take care to "like" the individual photo that you prefer and not the whole album.

The two winners will each receive a magnum of wine from their Wine Experience partner winery. We'll announce the winners on our Facebook page and on our blog on the 7th December!

Pruning the vines in Chinon


Last weekend, we welcomed the first clients of the 2015 vintage to Château de la Bonnelière in Chinon for a Discovery Experience Day. This sunny and fresh day enabled us to learn about the winery and the Clos de la Bonnelière vineyard. We met our adopted vines and learnt how to prune the vines, an essential step in the development of the vines.

Our host, Marc Plouzeau, introduced us to the winery and explained his long family connection to the estate. The winery's vineyards stretch across the left bank of the Vienne river, and include different terroir of gravel, clay and flint soils.

Having presented how the work is approached in the different vineyards, Marc gave us a sneak preview of his new range of labels which graphically represent this philosophy.

We then headed out into the Clos de la Bonnelière vineyard to meet our adopted vines for the first time!

After a few photos for the "My Vine" photo competition, it was time to get down to some more serious work!

To warm us up, we started by pulling away some of the pruned branches. The vineyard had been pruned by Marc's team, but he had left us the task of stripping away the old wood to leave a clean space around the branches left to produce this year's harvest.

Marc also taught us how to prune using the "Guyot Simple" technique which is anything but simple!

Each vine is unique, so each needs a moment of reflection before the secateurs start snipping. We started by removing the branch that had produced last year's grapes. Then we needed to choose the new branch for this year, which is usually on the other side of the vine from last year's. We then cleaned up the branch to leave just 8 eyes, so as to reduce the number of grapes, and increase their sugar levels. To finish we left a shorter branch or  "spur", which will then become next years fruit bearing branch.

To end the morning's activities, Marc explained the next stages of working the vines until they are ready to be harvested, from de-budding, trimming and green harvesting. Each of these steps will help to control the future yield and produce better quality grapes.

We were then rewarded with a tasting of the wines from the château and a meal in the barn. We tasted a Touraine Sauvignon 2014 white wine with the fish terrine, a Chinon Rive Gauche 2014 and a Clos de la Bonnelière 2012 with the blanquette de veau. To finish in style we enjoyed a Chapelle 2012 with some local goat?s cheese, and the little treasure of the winery, the "Ante Phylloxéra" wine, which is made from a micro plot of vines that haven?t been grafted, and can be traced back for more than 200 years!

Despite some requests for a siesta after lunch, we continued the day by visiting the tool shed and learning about the machines and equipment which help Marc and his team work the vines organically.

As the day drew to a close, we visited the fermentation hall, where Marc answered some of the last questions from our apprentice winemakers.
