Their Chablis - Sainte Claire, the wine chosen by Gourmet Odyssey, is regularly singled out for distinction by the wine critics, recently winning silver at the Decanter World Wine Awards 2016, being voted in the top 100 wines from around the world by the Wine Enthusiast, and being selected in a number of wine guides such as Bettane & Desseauve 2016 guide, the Guide Hachette des Vins de France, and the Guide des Meilleurs Vins 2016, published by the Revue du Vin de France.

Region

Chablis is renowned throughout the world for its fine white Chardonnay wines. Dry, fresh, zesty and mineral, Chablis wines are the result of a unique terroir, based upon the clay limestone hills that date from the Kimmeridgian era of the Jurassic age.  Many years ago, the sea covered the land here, and when the seawater gradually retreated, it left behind the fossils and oysters between the strata, that the vine roots draw from to give the aroma and taste characteristic to Chablis.

The Chablis region is located in the north east of Burgundy, less than 200km (120 miles) from Paris.  The vineyards from  the Chablis Appellation stretch between 20 villlages.  The small commune of Préhy, home to our partner Domaine Jean-Marc Brocard, is 8km (5miles) from the village of Chablis.

The Winemakers Welcome You...

After marrying Claudine, a winemaker’s daughter, Jean-Marc Brocard also fell for the charm of the vines.  He bought his first plot of vines in 1973 at Préhy.  With the help of his wife’s family and other local winemakers, he grew the estate and quickly forged its reputation as one of the leading Chablis wineries.

Today the winery is managed by Jean-Marc’s son, Julien, and his wife Laurence, although Jean-Marc is never far away and remains very involved in the life of the estate. A true family business!

Sainte-Claire

Starting with the 2016 vintage, the wine selected by Gourmet Odyssey at Domaine Jean-Marc Brocard is the Chablis Sainte Claire, named after the small church located next to the winery buildings. The grapes used in this wine are blended from the vineyards that surround the winery, including the Les Malantes plot, home to the Gourmet Odyssey adopted vines. The vineyards are planted on Kimmeridgian soil, enabling the wine to express the distinctive characteristics that have made Chablis wines famous around the world. They are worked using organic techniques and are currently in the process of obtaining organic certification.

Once the grapes have been picked and pressed, the wine goes through the alcoholic and malo-lactic fermentation process in stainless steel vats to maintain the maximum purity of the wine, and then it is left to age for up to 12 months.

The Sainte Claire wine is a fresh and precise wine, releasing lemony and yellow fruit aromas. On the palate it is well balanced, with just the right amount of acidity, and with enough structure for the flavour to linger on the palate.

The wine is normally bottled 10 - 12 months after the harvest.

La Boissonneuse (2011-2015 vintages)

The Chablis "La Boissonneuse" is the wine selected by Gourmet Odyssey at Domaine Jean-Marc Brocard for the 2011-2015 vintages.  This wine is produced biodynamically, from the growing of the grapes through to the making of the wine.

The grapes come from vines from the Boissonneuse vineyard.

The work in the winery is based around the lunar cycle.  No industrial yeast is used.  Part of the alcoholic fermentation process and ageing happens in stainless steel vats, the other part in wooden casks, normally for 12 months before bottling.

The nose mixes freshness, density and complexity.  It reveals hints of liquorice, mint, and candied citrus fruits (clementine, orange and lemon), which evolve to notes of grilled almonds, and vanilla.

A strong personality reveals itself on the palate, bringing  together energy and minerality. The finish is fresh and thirst-quenching.

The wine is normally bottled 12-16 months after the harvest.
